What Mrs. Fisher Knows About Old Southern Cooking. - book reviewsWhat Mr Fisher Knows About aged Southern Cooking by Abby Fisher with historical notes by the agency of Karen Hess (Applewood Books/Food Heritage Pres 1881/1995 $8.95)--This enthralling facsimile of what is believed to be the first cookbook compos by dint of an African-American is as significant for its historical value as for its culinary satisfied Originally published in San Francisco in 1881 through ex-slave and plantation cook Abby Fisher, the collection of 160 authentic Southern recipes remained largely forgotten for above a century, until it resurfaced and Applewood volumes reprinted it. Culinary historian Karen Hess provides an insightful historical afterword about the Mobile, Ala. mother of 11 who fl to the West with her family and eventually started a catering and pickle business. Unable to read or write, Fisher published the cookbook with the help of a certain number of prominent San Francisco residents "so that a child can understand it and learn the art of cooking." Recipes for various breads, cakes (gold silver and almond), pies (including sweet potato and cherry), puddings and roast meats are included. Since Fisher's pickle and secures recipes garnered several prizes at state fairs, it is not surprising that a number of them, similar as sweet watermelon rind pickle and brandy peaches, appear in this collection.
