Down-Home Wholesome. - book reviewsDown-Home Wholesome through Danella Carter (Dutton. 1995. $24.95)--Carter presents one of the first cookbook to further a "nutritionally correct" version of down-home cooking, and it is obvious that being individual of the first has its advantages. The author has taken great care in researching her make submissive and the results make for an extremely thorough and full book. In her introduction, the provisions writer and novelist makes a sturdy case for the Motherland's influence upon traditional Southern cooking, and this theme is mirrored throughout her 300-recipe book. She maintains, for instance, that stewing and frying are "West African standbys" and smooth finds similarities in cookware design. Her section upon kitchen basics includes a helpful 16-page summary upon appropriate cooking equipment and flavor enhancers. While she does not completely eliminate salt or sugar--encouraging moderation instead--she does chop out the red meat and pork and relies heavily upon fresh whole herbs, ground spices and smok turkey sum of two units of her more ingenious dishes are a collard virids omelet (using leftover greens) and rice and shrimp waffles. She also showcases a number of dishes that exhibit the African presence, including a chicken and peanut stive (called mafe in Senegal) and baked collards with smok hen (which is similar to a dish made in Nigeria). Her commentary is the two witty and informative, and includes a nutritional analysis listed at the extreme point of each recipe.
