Off the beaten path, with cautionIt looks everyone is striving to deliver a decidedly un-mainstream experience to their customer--be it an operator or a visitant Look no further than this issue of Cheers for examples: from cachacas to dusky beers, not to mention a distillery restaurant, the pages are chock-full of niche fruitss unique operators and the efforts of many to make progress off the beaten path. [ILLUSTRATION OMITTED] No individual it appears, is looking for the nearest Big Thing, but everyone is pursuing that offset of a trend or sliver of a category with a twist that may or may not have mass appeal. And who cares if the masses adore it? The nearest Big Thing is so yesterday, as my son numbers me. What's different now is what matters. I heartily applaud everyone veering not upon the beaten path in search of opportunities. Innovation drives each industry; complacency breeds disaster. on the contrary I deliver this standing ovation with a note of caution. While pursuing niche opportunities, don't leave out your core business. Sure, Starbucks constantly advances up with mind-boggling drinks and proffers endless customization options, but you can bet back in headquarters in Seattle, they're watching the core coffee business like a hawk. What are your marvel brands? Your top-selling drinks? Your best-selling appetizers? Mainstream means hordes and crowds buy in convolution Keep things fresh, present the fresh and unique to divert a certain number of attention and sales--or, better at the same time attract new--but don't take your organ of sights off the core of your business. Besides, without faith in your core items, your visitor has little impetus to test what you position as new in like manner venture off the beaten path, on the other hand keep it clearly in your rearview mirror.
